note to self
We've been soaking and dehydrating our nuts before use for a while now and definitely notice a difference in both improved digestibility and nicer flavor and texture.

While snacking on a soaked & dried pecan just now I noticed something about the flavor that reminded me of curry powder, which got me thinking about curry-spiced or garam masala-spiced pecans... Hmm.

*wanders off to spice cabinet*

If you're getting your garam masala from Vik's, I'd go that route. It has always tasted a bit nutty to me, and their curry powders are a bit acrid.
