dinner tonight: indulgent salad

one apple out of the crowd
Tonight's dinner: Indulgent Salad, aka California Kitchen Sink "What Do We Have On Hand" Salad
A couple of leaves of red leaf lettuce
Half a carrot, thinly sliced
Half a small, tart-ish apple, diced
A few tablespoons of Trader Joe's Beluga Lentils
A round or two of red onion, diced
Small handful of pomegranate seeds
Small handful piñons, toasted
An avocado, diced
Toss well with your favorite dressing. I recommend my dad's Curry-Balsamic Salad Dressing:
scant teaspoon curry powder
1/2 cup olive oil ("the good stuff", says Dad)
1/4 cup balsamic vinegar
1/4 cup rice vinegar

Have you tried Trader Joe's Multigrain Pilaf? It's really good and comes in nukable bag for taking to work. 400 calories, 8 grams of fiber, and tons of whole grains.

I think we have a bag at home in the pantry. Haven't tried it yet, though. Also some of their Thai lime rice pilaf.

It was a sad day when they discontinued the Thai tuna curries, though. *sigh*

I loved the tuna in red panang curry, but it always made me slightly ill. Not sure why.

Thank you! Want to try the dressing ASAP. Wisconsin kitchen sink salad looks a little different, especially this time of year, but still good... yet oh, I miss avocados...
