I'm off to the kitchen to attempt my first batch of sauerkraut. Wish me luck.

ETA: Decided the cabbage had been hanging around the produce drawer a little too long to make a good candidate for my first fermentation attempt. I think I'll get a fresher one to work with.

Sometimes mold appears on the surface.

Given my recent mold experiences, I am currently disinclined to experiment, much as I greatly love sauerkraut. However, best of luck! Sauerkraut is a wonderfood, especially warmed over hot mashed potatoes. (yeah, there's some German in my blood)
